Diet Soda Cake

I know, it sounds odd doesn't it?

When Patti first told me about this cake we were both very skeptical. I had never heard of it. She had heard that it was good. We'd keep checking back with each other to see if one of us had made it.

Well Patti made one recently and really liked it. She made diet Sprite/white cake mix cupcakes. She liked it so much she then made diet coke and strawberry cake mix cupcakes. She topped that one with a whipped topping and chopped fresh strawberries.

Reminder: best to check for High Fructose Corn Syrup and avoid it if you can.

The Recipe:

(1) 18.5 oz pkg of cake mix
12oz of diet soda

Mix the dry cake mix with 12 oz of diet soda. (Do NOT use the egg or oil listed on the box).

Spray a 9 x 13 cake pan (or cupcake tin) with non-stick spray.

Bake according to package instructions.

Tip: Make sure to let the cake cook completely before you try to cut it. Because you aren't adding eggs, the cake will be tender and can tear if you cut it while it's warm.
